Cinnamon Raisin Bread






Ingredients

2 cups Raisins
2tsp Baking Soda
2 cups Boiling Water
3 cups Flour
1 cup Sugar
1tsp Salt
2 Eggs - Beaten
2tbsp Salad Oil (I used EVOO)
3tbsp Cinnamon

Step 1:

Preheat oven to 350 degrees.

Combine raisins and baking soda in small bowl. Add boiling water. Cool 30 minutes.

Mix flour, sugar, cinnamon and salt in medium bowl.

Stir raisin mixture, egg and oil into flour mixture. Mix well.

Step 2:

Pour into a greased and floured 9x5x3 inch loaf pan.  I used a Bunt Cake Pan

Bake at 350 degrees for 45 minutes or until golden brown and when tester inserted in center comes out clean.

Cool 10 minutes in pan. Remove to wire rack.
