Potato Pancakes





Ingredients:

5 Large Potatoes (6-7 medium) - Grated
2 Tbsp Flour
1 1/2 Tsp Salt
1/4 Tsp Baking Powder
1/8 Tsp Pepper
2 Large Eggs - Beaten
1 Tsp Onion - Grated


Step 1:

Grate the potatoes in to a medium sized bowl.

Step 2: 

Mix all other ingredients into a separate bowl.

Step 3:

Drain excess liquid from potatoes.

Step 4:

Mix grated (drained) potatoes into batter mixture.

Step 5:

Using a tablespoon;  place heaping spoon fulls of potato mixture into a hot, oiled skillet.  Flatten the mound of potato mixture down with the back of the spoon.

Fry until golden brown on each side.

**TIP**

Place pancakes onto paper towel to absorb excess grease before serving.

YIELD: 7-8 Palm sized pancakes.
